In 2006 a standardized norm was put in place to ensure the quality of the product.
The truffles put up for sale must henceforth be whole without any breakages.
They must also have a distinctive smell, a taste and a color that specifically characterizes them. They must also be clean and without parasites and other such moldiness.
Finally, they must have a weight superior to 5 grams.
The truffle is a subterranean fungus that grows symbiosis with certain types of trees, in particular green oaks. It is born especially between April and June.
The heat of July and the thunder storms of august start of their growing cycle. If the quantities of water and heat are optimal, the final quality of the mushroom can be obtained in September.
The truffle can finally be picked between November and February. To collet it, there I nothing better than a trained dog who sniff out this delicious mushroom.
Presented whole in their jar, they keep their flavor and aroma.

We have offered these high quality truffles in sweet little jars of 12.5g or 25g.
In the 12.5g jar, this truffle can allow you to create between 1 or 2 recipe for 2-4 people.

Concerning the choice of wine, we would recommend such a wine that accentuates the refined flavors of the truffle. In order to enhance the delicious taste of this Duck Liver Mousse you can accompany it with a "Brut" Champagne, such as Marie Stuart, or even a lightly fruity Montravel white (La Cuvée Château Moulin Caresse)
There are many ways in which you can cook the truffle. You can incorporate it in a fresh pasta dish, in an omelet or in a oeufs cocotte recipe (a recipe that you will be able to find on our website), you could also cut them thinly and place them on freshly chilled Scallops: Paradise if you ask us!
