In 2006 a standardized norm was put in place to ensure the quality of the product.
The truffles put up for sale must henceforth be whole without any breakages. They must also have a distinctive smell, a taste and a color that specifically characterizes them.They must also be clean and without parasites and other such moldiness. Finally, they must have a weight superior to 5 grams.
The truffle is a subterranean fungus that grows symbiosis with certain types of trees, in particular green oaks. It is born especially between April and June. The heat of July and the thunder storms of august start of their growing cycle. If the quantities of water and heat are optimal, the final quality of the mushroom can be obtained in September. The truffle can finally be picked between November and February.
To collet it, there I nothing better than a trained dog who sniff out this delicious mushroom. Presented whole in their jar, they keep their flavor and aroma.
They are ideal to be added to a simple yet sophisticated recipe, whereby the wholesome flavor of the truffle can be accentuated.

We place the truffles in air tight packaging so that they keep their fresh nature when they arrive to you.
If you don’t consume the truffle straight away we would advise freezing the truffle in its originally air tight packaging.
This way the authentic and aromatic perfumes of the truffle are conserved throughout the year.
There are many ways to cook the truffle. There are many ways in which you can cook the truffle; you can incorporate it in a fresh pasta dish, in an omelet or in a oeufs cocotte recipe or place thin slices on scallops: what a delight!
Concerning the choice of wine, we would recommend a drink that accentuates the refined flavors of the truffle, such as the Marie Stuart Champagne, or even a fine and aromatic white wine such as a Montravel, Château Moulin Caresse; either way, it’ll be a real treat!
