  “L'enchaud” is a traditional Périgord recipe made up of salted Pork meat.

“L'enchaud” or “Anchaud” as we call it in the Périgord region is confit of roast pork cooked with garlic and conserved in Goose or Duck grease, which makes it particularly tender and flavorsome.

We have used a traditional family recipe and confits were prepared a few days after the slaughter of the pig in order to confit it and put it in a jar for the winter.

Our recipe is handed down through he generations and has been passed on from our Mother.

Thanks to our know-how, this product is both tender and tasty, simply cooked in duck fat with a little salt and pepper, without coloring or preservative.

The pigs selected for this production are always selected for their strict feeding and the quality of their meat.

Our “Enchaud” comes in 3 different jars : in 300g (ideal for 2 people and can be cut into 3 servings), in 450g (ideal for 4-5 people) and 1 kilo, which is ideal for large dinner parties.

This Enchaud can be kept for 4 years after its fabrication date. After opening, keep in the refrigerator and consume quickly.

Keep the jar in the fridge a couple of hours before consuming the product.

We would recommend serving this product cold, englobed in its own jelly and accompanied with a salad, potatoes or fries.

In terms of wine, we would recommend serving the pork confit with a fruity and chilled wine such as the Bergerac rosé "Maison Le Fagé" or a Pécharmant "Arômes de Peyrelevade".

The Enchaud pork couples perfectly with these fruity summer wines that you can find on our website.
